Foodie Friday – Easy Chilli 

I make no secret of it. I’m a big fan of Mexican food. In fact, I may or may not have purchased a fajita kit for this evening’s dinner whilst doing the food shop this afternoon. One of my go to meals is chilli as it is so quick and simple, filling and delicious. *Nachos as a side dish are a delicious optional extra 


Ingredients: 

-500g Mince 

-Onion

-Chilli flavouring (I generally use old El Paso as I tend to over season if left to my own devices) 

-Red pepper 

-Kidney beans 

-Chopped tomatoes 

Method:

-Chop the onion and pepper into small pieces and fry on the a medium heat in a pan until soft and browned, put to one side

-Brown the mince in the pan and add the pepper and onion back in

-Tip in the seasoning and mix until evenly coated. 

-Add the chopped tomatoes and stir

-Pour in some kidney beans and stir 

-Simmer for a further 10 minutes and serve in bowls with tortilla chips to add a bit of crunch (we also add some cheese because, what can I say, we love cheese)
